Old-Fashioned Macarons (Macarons a l'ancienne) Recipe with Marc & Chef Mel
When Chef Mel said she wanted to show me how to make Old-Fashioned Macaroons, I was instantly in! These classic macaroons are surprisingly easier to make than their French counterparts.
Plus, I’ve tried them in France at Maison Adam, and they were delicious.

Old Fashion Macarons by Chef Mel
Makes 40-50 macaroons
Ingredients:
* 250g almond flour
* 200g powdered sugar (plus more for dusting)
* 120g egg whites (room temperature)
* 4g vanilla bean paste
* 2g almond extract
Instructions:
1. Preheat oven to 325°F (160°C). Line baking sheets with parchment paper.
2. Mix almond flour & powdered sugar.
3. Combine egg whites, vanilla & almond extract. Stream into dry ingredients.
4. Pipe small rounds onto baking sheets. Dust with powdered sugar.
5. Bake 15-20 minutes or until golden brown.
6. Cool completely. Store in an airtight container for up to 2 weeks.
